Easy One-Pot Buffalo Chicken Chili

A delicious, healthy dinner-version of the famous dip!

Equipment

  • Dutch Oven, Stock pot, or Crock Pot

Ingredients

  • 2 cups chicken broth
  • .5 cups Frank's Red Hot
  • 1 can diced tomatoes
  • 1 can corn
  • 1 can white beans
  • 1 lb pre-cooked diced or shredded chicken
  • 1 block cream cheese
  • 1 packet ranch seasoning mix
  • 1 dash onion powder
  • 1 dash garlic powder
  • 1 dash salt and pepper to taste
  • optional: crumbled blue cheese
  • optional: cilantro

Instructions

  • Dump all ingredients except blue cheese and cilantro into the pot
  • If using a dutch oven or stock pot: bring to a boil and then stir. Reduce temp and simmer for 30 minutes
  • If using a Crock Pot: cook on high for 4 hours or low for 8 hours, stirring intermittently
  • Top with crumbled blue cheese and cilantro, serve with French rolls or ciabatta bread!
