Crock Pot Beef Stew Recipe

There is nothing like kicking off the Fall season with some beef stew! I have to make it at least a few times every Fall/Winter.

It’s so inexpensive, easy, can feed a crowd, and makes for great leftovers!

I’ve been doing this recipe for about 6 years now, tweaking little by little. But this formula is tried-and-true.

Crock Pot Beef Stew

Equipment

  • Crock Pot

Ingredients

  • 1 large yellow onion large diced
  • 2 large carrots large diced
  • 2 stalks celery large diced
  • 1 lb stew meat or chuck roast
  • 2 tbsp (heaping) of Better than Bouillon. Can be veggie, chicken, or beef. Beef will be the richest
  • 2 cups veggie, chicken or beef broth. Beef will be the richest
  • 1 head garlic minced
  • 3 sprigs thyme
  • 8 medium Yukon Gold potatoes you can substitute with 6 russet

Instructions

  • Add all ingredients together in the Crock Pot and stir
  • Cook on high for 4 hours, or low for 7
  • Serve with French bread and enjoy!
